Cali-Style White Bean Bruschetta

Bruschetta is traditionally made with tomatoes, basil, and garlic, but this “Cali”-Style Bruschetta uses white beans and avocados for added flavor and health benefits. White beans are full of cholesterol-lowering fiber, which helps regulate blood sugar and detoxify the digestive tract.

1 can organic white navy beans, drained and washed
1 avocado, cubed
Handful of fresh basil, chopped
1 cup cherry tomatoes, halved or cut in fours
Splash of olive oil
Splash of balsamic vinegar
Sea salt and black pepper
Your favorite bread or baguette
Stir all together and let marinate for at least 30 minutes. Taste, and season with salt as necessary.
Toast your favorite bread or baguette and top with bruschetta!
