Apple Chutney

This recipe for Apple Chutney includes the warming and stimulating spice cinnamon, which is known in India and other cultures to have excellent healing abilities. It goes great with the Seitan-Stuffed Collard Greens
Cinnamon is known to help regulate blood sugar levels. If you use it to season a high carb food, like bread or oatmeal, cinnamon can help slow the release of insulin into your bloodstream. Plus, the essential oils in cinnamon bark are considered “anti-microbial” for their ability to stop growth of bacteria and yeast. Also, apples are bursting with fiber and phytonutrients.
1/2 cup fresh squeezed apple juice
2 cinnamon sticks
5 cloves
4 apples, small cubes
Pinch of sea salt
1/2 cup golden raisins
1/4 cup agave
1 tablespoon grated ginger
1 celery stalk, diced
Zest of 1 lemon
Combine apple juice, cinnamon sticks, and cloves in a small saucepan and simmer for 10 minutes. In a larger pot, combine the rest of the ingredients with the juice and warm over medium heat (be sure to remove the cloves and cinnamon stick before adding the juice). Bring to a boil, cover, reduce heat to low and simmer for 50 minutes. Stir occasionally.
