Rich & Creamy Squash Sauce

This recipe is quick, easy, and delicious. It’s on the sweeter side, so if you prefer you can leave out the applesauce.
The orange-red carotenoid found in pumpkin has been shown to lower the risk of developing lung cancer. These healthful carotenoids can also be found in corn, tangerines, peaches, papaya, and red bell peppers. Carotenoids absorb light energy of certain frequencies and transfer it to chlorophyll for use in photosynthesis, and they have anti-oxidant properties.
About 2 cups butternut, peeled and cubed
Pinch of sea salt
1/4 cup unsweetened applesauce
1 tablespoon tahini
1 teaspoon ground ginger
2 teaspoons ume vinegar (or 1 teaspoon of sea salt to taste)
Boil the squash with a pinch of sea salt until tender. Drain. Puree with rest of ingredients in a food processor.
Viola! Use this sauce in any number of way, and add or change ingredients to suit you creative desires!
