00ml (17½floz) Water
200g (7oz) Caster Sugar
60ml (2floz) Grappa (Italian Liqueur)
3 Lemons

Finely pare strips of the zest from the lemons.
Add the sugar with the water into a saucepan, heat stirring well until the sugar has dissolved.
Add the lemon zest and simmer for a few minutes.
Remove from the heat and allow to cool fully.
Remove the zest strips and discard.
Add the juice from the lemons and the Grappa.
Either place in an ice cream maker, following the manufacturers instructions.
Or, place in a freezer, allow to freeze for about 20 minutes, remove stir and break up with a fork.
Return to the freezer.
Serve as a dessert or between courses.
